Chicken, Apple, and Goat Cheese Spinach Salad

This salad is just beautiful -- a real treat for the eyes as well as the tastebuds. It's a nice, light salad that doesn't lack flavor in the slightest. Chicken and apple is one of my favorite combinations, and this salad puts a nice spin on that with goat cheese and craisins.

Chicken, Apple, and Goat Cheese Spinach Salad
2 handfuls of spinach
1 chicken breast
1 apple
2-4 oz goat cheese, crumbled
1/2 C dried cranberries

Since it's a salad, the preparation is fairly simple. Grill up the chicken breast in your preferred manner -- I go with the grill in the summer and the stove if it's cold outside. But who am I to tell you how to cook your chicken?

Cut up the chicken breast and crumble the goat cheese and toss them onto the fresh, washed spinach. Sprinkle with dried cranberries, toss in 1/2 inch cubes of apple (I find a softer apple works best) and top with your favorite dressing. I used a pomegranateĀ vinaigretteĀ that was to die for.
